We are now offering sides, quarters and whole beef for those customers who wish to purchase in bulk! Our 100% grass-fed beef is naturally dry-aged. This means that the beef carcasses are hung for 7-10 days, as this is the best way for beef to achieve the best flavor and tenderness. Most beef in the supermarket is wet-aged in plastic bags, which does not allow for the best flavor.
Pricing and Ordering
Prices are based on the hanging weight of the carcass and customers have the flexibility to have it custom cut by the butcher. All the cuts are then vacuum sealed in individual packages for your convenience. For an idea of percentages of cuts, see this chart. This chart is handy especially if you are planning to split your order between a few parties. For example, the short loin is where filet mignon and strip steak or porterhouse and T-Bone steaks are cut from. This is approximately 8% of the animal. Using a quarter as an example, where you receive approximately 100 lbs in retail cuts, you would get approximately 8 lbs in short loin cuts. The yield is less if you opt for boneless cuts versus bone-in. We know that cut sheets can seem like a foreign language, so please give us a call or come into the store to go over any of your questions with us.
Quarters: The cost per pound for a quarter is $5.40 and the approximate hanging weight is 160 lbs. This yields approximately 96 lbs in retail cuts. The price is based on the hanging weight and therefore the approximate total cost is $864.00.
Sides: The cost per pound for a side is $5.25 and the approximate hanging weight is 320 lbs. This yields approximately 192 lbs in retail cuts. The price is based on the hanging weight and therefore the approximate total cost is $1,680.00.
Whole: The cost per pound for a whole beef is $5.15 and the approximate hanging weight is 640 lbs. This yields approximately 384 lbs in retail cuts. The price is based on the hanging weight and therefore the approximate total cost will be $3,296.00.
Ground Beef Package: Also consider adding on our ground beef package option to your order. The package includes 40 lbs of ground beef at $5.50 per lb, for a total cost of $220.00.
Order/Cut sheets are available for download here. The sheets must be printed and filled out, then returned in person or by mail to place an order. An order must be confirmed with a Lima Family Farms employee during regular business hours, unless otherwise arranged. If ordering by mail, please indicate whether you’d prefer to be contacted by email or phone to confirm an order. We require a deposit of 25% to place an order and payment in full is required upon pickup of the order. Customers will be informed of the final cost and pickup day by email or phone (please indicate preference) when that information is known.
Please note the following when considering placing a bulk order:
- All weights and pricing are approximate and vary by animal
- You must be able to pick up your order at the farm. We do not ship meat.
- All orders must be picked up on the appointed pickup day. We do not store meat at the farm.
- All orders must be accompanied by cutting instructions, or the butcher will do a standard cut.
- Bulk pricing only applies to bulk purchases and cannot be applied to retail cuts at farm store.
