Why Our On-Farm Butcher Shop Matters!

Hey there, neighbor!

We’ve got something pretty special out here in Hillsborough—and we don’t just mean the sweeping pasture views or the happy pigs rooting in the soil.

In 2023, Lima Family Farms officially opened a USDA-inspected red meat processing facility right here on the farm. It’s rare (especially in New Jersey!) for a farm to process its own meats on-site. But for us, it’s a game-changer—and more importantly, it’s a promise to you.

Why We Built It

We raise our animals with care on over 360 acres of rotating pasture. Our beef herd is grass-fed and grass-finished. That means they’re never fed grain—even in the final stages—and their meat is leaner, healthier, and better for the land.

But all that care would fall short if we had to ship them off to a facility hours away.

  • Every Monday, we slaughter on-site.

  • Every weekday, we cut, prep, and package.

  • We process up to 4 cows and 4 pigs a week—just enough to sell out every weekend at our farm store and supply a few local restaurants and small grocery stores. 

Why It Matters for the Animals

Raising animals with care means seeing the process through from start to finish—including the hardest part.

Because we have our own USDA-inspected facility right here on the farm, our animals never have to experience the stress of long transport or unfamiliar environments. Their final moments are quiet and calm—just a short walk from the pasture they’ve always known.

We believe that honoring the life of each animal means taking responsibility for the entire journey, including the end.

This is one of the biggest reasons we built our facility: so we could uphold the same standards of care, dignity, and respect at every step. It’s not about bells and whistles—it’s about doing right by the animals who feed us.
