One of our crew members Liz has a recipe she wanted to share with y’all. Lot’s of these ingredients can be found at our farm store. Enjoy!

Turkey Meatballs

1# ground turkey
1 cup bread crumbs
2 large eggs
Salt and Pepper
2 tsp Coriander
6 strips Bacon, chopped into small pieces
1# Mushrooms, chopped into small pieces
1 small onions, chopped into small pieces
1 carrot, shredded on the small side of the grater

Oven set to 350 degrees 
Use a baking dish or a cast iron pan, or a cookie sheet

First, cook the Bacon, Mushrooms, and Onions in a skillet over medium heat with a little oil. The bacon will supply enough cooking fat once it all starts getting hot. Season with a small pinch of salt, a pinch of black pepper, 2 teaspoons of coriander.  

Shred the carrot into a large mixing bowl. Once the bacon and mushrooms are well sauteed and aromatic, add them to the bowl with the carrot, mix and set aside to cool slightly. 

Once cooled enough, add ground turkey, bread crumbs, 2 large eggs, a good pinch of Salt and a few good cracks of black pepper. Mix thoroughly with your clean hands and patty the mixture into 10 medium sized meatballs. Place them evenly spaced apart on your baking dish and bake until the meatballs reach 165 degrees internal cooking temperature. …25-30 minutes maybe. 

Enjoy with some roasted squash, polenta or potatoes and a side of broccoli!
